These 5-ingredient keto breakfast pockets are filled with ham and melty cheese. They're easy to prepare, nut-free, grain-free and egg-free and can be prepared in under 30 minutes.

Just like my Keto Spanakopita, this recipe is adapted from Keto Morning Hot Pockets which went viral over the social media. If you can eat nuts, you can follow the original recipe that is made with almond flour - you will only need 4 ingredients: shredded mozzarella, almond flour, ham and cheese - that's it!

Ingredients (makes 2 servings)

  • 3/4 cup shredded mozzarella (85 g/ 3 oz) - use low-moisture, part-skim, shredded mozzarella cheese; not fresh mozzarella.
  • 1 heaped tbsp cream cheese (30 g/ 1 oz)
  • 4 tbsp flax meal (28 g/ 1 oz)
  • 85 g quality ham (3 oz )
  • 85 g slices provolone cheese (3 oz) - you can use any cheese you like: cheddar, smoked mozzarella, etc.

Instructions

  1. Prepare the dough: melt the shredded mozzarella and cream cheese in a microwave oven for 1 minute, checking half way through. 5-Ingredient Keto Ham & Cheese Pockets
  2. Add the flax meal. Stir until the dough is well-combined. 5-Ingredient Keto Ham & Cheese Pockets
  3. Roll the dough out between 2 sheets of parchment paper (I used a silicon mat and silicon rolling pin). 5-Ingredient Keto Ham & Cheese Pockets

  5. Fold over like an envelope and seal the dough. 5-Ingredient Keto Ham & Cheese Pockets
  6. Poke some holes for releasing the steam while baking. Bake at 200 °C/ 400 °F for 15-20 minutes or until golden brown and firm to the touch. 5-Ingredient Keto Ham & Cheese Pockets

It depends where you live - I got this one in the UK. Here's a link to Amazon.com: Amazon link It looks similar but I don't think it's the same. Both will work though!

My hotpocket came out perfect!  Instead of cream cheese, I used Sheeps yogurt. And instead of the Mozzeerella Cheese I used Sheep's Cheese because my current diet calls for no cows dairy. And since it was breakfast time, I replaced the ham with Scrambled eggs. So it was a breakfast pocket instead. It was delicious and the crust was golden brown and crunchy. I stared at the ingredients for half an hour b4 I made it bc I couldn't fathom how those 3 ingredients could make a crust. But the crust was the best part. Crunchy and perfect. Weeey better than a store bought frozen hotpoclet. Hands down! 6 stars!

Brilliant idea. My plan has same restrictions. What kind of sheep cheese did you use? Was it grated pecorino-Romano or a creamy sheep cheese spread type?

I think that a pecorino Romano type of cheese would be too hard and dry and the spreadable cheese won't work because it's too moist and won't provide the elasticity the dough needs. I think you'll have use hard cheese that has emmental-like texture.

This is my favorite recipe!  I use this dough for everything, much less fiddly than trying to get the egg in traditional fathead dough.

Just to clarify, Martine, the freezing was done before the pockets were cooked or after?  You said "reheated", which means to me that it would be after, but someone used the same term on another blog and they actually meant that I should freeze the item before cooking.  Either way, this recipe may be an answer to prayer.

I do think that both will work but I do mean "after" here. I think you could even freeze the uncooked pockets and then bake them for a little longer.

I am ready to try the herb butter, really tired of that old bland butter, also good tips on using flax seeds.

I didn't have the meal, just regular flax seed.   Put it in my food processor for about 3 minutes didn't do anything.  That being said,  it still turned out delicious!!!!  Quick and easy to make.  Recipe is a keeper!

So wonderful! I actually used coconut flour and really loved the hint of sweet it added to the salty cheese. Definitely a keeper!! And very easy to make!

Thank you for sharing! Then only issue with coconut flour is that it is very absorbent so you may need to add extra moisture - one tablespoon of cream cheese is a good option 😊

Would it be possible to make a sweet version of this? Add cacao and stevia to the dough and fill with low-carb chia jam and cream? I saw that it's important to keep the moisture low so maybe that isn't possible?

Thank you for this! It was delicious. I don't use parchment, because even though I use the low skim shredded mozzarella it sticks like glue to it. This morning I put it directly on my cookie sheet and it was fine. I filled mine with scrambled eggs and a little cheese. It was delicious!

Hi Natalie, I think you may be using the wrong type of mozzarella - this dough should not stick. You need to use low moisture, shredded mozzarella for pizza.

Do you think the crust would hold up if you filled them with pizza toopings w pizza sauce?

Hi Jim, it's better to avoid excess moisture so if you can keep the moisture low, this should work too 😊

I made the Ham and Cheese version today and it was delicious and filling! My husband is now trying to eat low-carb and he said “this is a keeper”. We shared it, and neither of us have been hungry all day. My only mistake was that I should have left it on the parchment paper, when I transferred it to the baking sheet...it badly stuck to the sheet. Lesson learned.

Dear Martina,
I really like this recipe but I have some troubles with "dough". This amount of mozzarella, cream cheese and flaxmeal isn't enough to make large enough dough to put cheese and ham and to close it like you do. What is the trick,please help.?

Could it be that the ham and cheese slices are bigger? You can always double the dough but don't forget to reflect that in the nutrition facts 😊

What is a good substitute for flaxmeal? I prefer not to use it.

Absolutely - it can be doubled or tripled! You could even make a large roll and slice it like keto Stromboli.
