These Salmon Mousse Cucumber Rolls make a great low carb/keto friendly party appetizer! I’ve also been known to eat these for breakfast as well since smoked salmon is one of my favorite foods! If you’re dairy free I’ve had great luck using an almond based cream cheese alternative like Kite Hill.

Sometimes I’ll add some capers and red onion to the mousse too but this version is classic, simple, and totally delicious.

Ingredients (makes 30 rolls)

  • 8 oz cream cheese (226 g)
  • 4 oz smoked salmon (113 g)
  • 1 tbsp fresh dill + more for garnish
  • 1/2 lemon, juiced (about 2 tbsp)
  • 2-3 cucumbers (900 g/ 2 lbs)

Recommended serving size: 4-6 rolls.

Instructions

  1. Start by using a mandoline to thinly slice the cucumbers into long strips.

  2. Place the cream cheese, salmon, dill, and lemon in a food processor and blend until smooth. 5-Ingredient Salmon Mousse Cucumber Rolls

Hi can I just ask where the cucumber seeds are?  All your slices don’t seem to have any?

Well spotted! Most don't seem to have seeds and I assume Lauren didn't use the middle slices as the part that has too many seeds is fragile. You can see some in step 2.

Can I cut the cuecumber into chunks, hollow out part and pipe in the salmon mousse  and add a sprig of dill?
