I was a late bloomer when it comes to French toast. I was in my 20’s before I ever ate a slice, and that was one that I’d made myself…really badly. It was weirdly soggy, eggy bread that wasn’t pleasant at all.

So, I never really understood why it was so popular. I mean, I knew that I’d failed spectacularly in my previous efforts but had never really turned my hand to it again. Until now.

Using my 90 second keto bread recipe and a deliciously spiced soak, this low-carb French toast is soft and fluffy on the inside and crispy and golden on the outside. NOW I get it!

I might have moaned a little bit when I bit into the first slice. I had mine with a simple sugar-free syrup but I’m already imagining other toppings that I can pair with it.

How To Make Nut-Free and Dairy-Free Keto French Toast

If you need to make this recipe nut-free, simply swap the same amount of ground sunflower seeds for the almond flour. If you want to use coconut flour instead, replace the 1/4 cup almond flour with about 2 tablespoons of coconut flour and add 1 to 2 tablespoons of water.

To make this keto French toast recipe dairy-free, replace the butter with melted ghee (dairy but usually well tolerated) or melted coconut oil, and the cream with coconut cream. Enjoy!

Instructions

  1. Prepare all the ingredients for the 90 second bread. It's the same recipe that we used in this Keto Grilled Cheese Sandwich. 90 Second Keto Bread French Toast
  2. Mix together the 90 second keto bread ingredients: egg, olive oil (or melted butter, ghee or coconut oil), almond flour (or ground sunflower seeds), baking powder, erythritol and cinnamon. 90 Second Keto Bread French Toast
  3. Place it in a one cup ramekin and microwave for 90 seconds, checking halfway. If still raw in the middle, cook for another 30 seconds.

  4. Tip out and let cool. Once cooled enough to handle, split in half and cool further.

  5. Whisk the French soak ingredients together in a shallow dish: egg, cream (or coconut cream), salt and cinnamon. Lay the bread in it to soak the slices of bread for 1-2 minutes per side. 90 Second Keto Bread French Toast
  6. Heat the butter in a frying pan over medium-high heat and fry the bread until golden on each side, approx. 5 minutes.

  7. Optionally serve dusted with powdered sweetener, with keto ice cream, with sugar-free syrup (such as Lakanto monk fruit syrup) and/or powdered low-carb sweetener, with whipped cream, and/or with bacon. 90 Second Keto Bread French Toast
  8. Store, covered, in the refrigerator for up to 4 days, reheat in the frying pan.

Would you think hemp flour would work as a substitute for almond flour?

I've never used hemp flour in my recipes but I assume that if it's made from ground hemp seeds (simply ground, not defated), you can use them interchangeably.

Almond flour is not nut free as your recipe states.

Hi Susan, it depends on the pan/form you'll be using. I would bake mine at 175C fan for 15 to 20 minutes. It could even be 10 minutes if it's very shallow. Definitely keep an eye on it!

Can we substitute heavy cream powder for cream in this?

I've never considered that but I think that you can as long as you rehydrate it I'd guess 1 teaspoon of cream powder and 2 teaspoons of water? Even if you use a little more it should work fine.
