This low-carb dish is the perfect choice to feast your family on a special occasion.

Unlike the traditional oven roasting method, you will be making this rack of lamb in a pressure cooker! You can use the Instant Pot — it's one of my favorite ways to cook lamb. Apart from saving a ton of time, this method produces deliciously moist and tender meat in just 20 minutes!

If you don't have an Instant Pot, you can roast the lamb in the oven (follow these cooking instructions) or even in a slow cooker (Cook on low for 5-6 hours, turning the racks 1 or 2 times or spooning the juices over. You won't need more than 1/4 cup/60 ml of stock when using a crockpot).

This easy rack of lamb recipe is perfect for quick a weeknight dinner. Even if you have last-minute guests at your house, you can make this spiced rack of lamb and a quick low-carb side to serve with in just 45 minutes!

Ingredients (makes 6 servings)

  • 1.35 kg rack of lamb (3 lb) will yield about 50% meat
  • 2 tsp coarse salt or about 1 tsp fine sea salt
  • 1 tbsp ground black pepper
  • 1 tbsp paprika
  • 2 tbsp garlic flakes or 1 1/2 tsp garlic powder
  • 1 tbsp onion powder
  • Optional: 1/4 tsp saffron
  • 3 tbsp fresh tarragon or 1 tbsp dried tarragon
  • 2 tbsp unsalted butter, ghee or duck fat (28 g/ 1 oz)
  • 1 cup beef stock or bone broth (240 ml/ 8 fl oz)
  • 1 tbsp lemon juice (15 ml)


  1. Mix all of the spices and pat dry the rack of ribs using a paper towel. Easy Instant Pot Rack Of Lamb
  2. Evenly rub on both sides of the lamb racks.

  3. Put a steamer rack inside the Instant Pot and place in the rack of lamb. Top with sliced butter and fresh tarragon on top. Add the beef stock and lemon juice into the Instant Pot. Secure the lid and cook under Manual and High Pressure for about 15 minutes. Once cooked, release pressure manually. Remove from the Instant Pot. Easy Instant Pot Rack Of Lamb
  4. Place the lamb chops inside a pan with 1/2 cup of sauce and place in oven to broil on high, for 3 to 5 minutes per each side. (Tip: Wrap a piece of aluminium foil tightly around the exposed rib bones to prevent them from burning.) Easy Instant Pot Rack Of Lamb
  5. Remove from oven and let rest for 2 minutes. Slice and serve! Best eaten immediately while still warm. You can store the ribs covered in the fridge for up to 3 days. Always reheat in the oven or microwave before serving. Easy Instant Pot Rack Of Lamb

Cooking time was off by a mile!  Mine had to go back in the Instant Pot for another 10 minutes.

Did you trim the fat off before cooking?

Hi Jillian, no fat was trimmed off before cooking. Some will drip down below the rack and can then be used for basting before finishing under a broiler.

How long do you cook in the oven? You preheat to 400 but for how long? You say to broil on high as well, those are completely different actions

how long do you think you should cook them if the lamb is frozen?  (or do you think you can use frozen?)

Hi Maria, I would always recommend defrosting. Frozen meat is hard to cook more evenly, especially if it's a thicker cut.

Made this on Sunday - it was absolutely delicious!   Super tender.  I will admit, when I first saw that it was a rack made in the Instant Pot, I was hesitant, but hubby said “heck let’s try it” and I am so glad I did.  Thank you for sharing this.  Will make this again for sure.

Do you have any idea how much time in the instant pot if I reduce the size to about half of your rack? I have turned meat into the texture of rubber before, and read it was from over cooking,  so I am uneasy about 15 min.  I love lamb and your recipe sounds wonderful.  Looking forward to more recipes with a persian flare.

Hi Sher, the rubbery effect is what you'd get by overcooking steak but also ribs (if your goal is medium or medium-rare). When made in the Instant Pot, they will be will done but soft and juicy. The 15 minutes should be about right but you can always go up to 25 minutes (high pressure), plus use natural (not manual) release. In case of ribs, an extra time will be better and will ensure soft and tender ribs. I hope this helps!

It's really easy to me to be keto on Thanksgiving because I don't have a sweet tooth. We're having roast turkey with gravy and deviled eggs for starter. No dessert for me but I may have some whiskey 😊
