Have you ever wanted to make low-carb Baileys? With my keto condensed milk it's easier than you think!

Unlike the traditional alcoholic beverage that contains over 15 grams of carbs per serving, this homemade Baileys only contains 1 gram of carbs which makes it ideal for those who follow a low-carb approach.

It's a great drink for any special occasion including holidays, Valentine's Day or birthdays. Enjoy this low-carb liqueur over ice, in your coffee instead of keto coffee creamer, or add some to your keto mug cake!

How To Make Keto Baileys

I used equal parts of keto condensed milk, heavy whipping cream and whiskey but you can fine tune the amount of each to your liking. If you don't have both vanilla and almond extract, you can substitute them with one another. If you don't have instant coffee powder, a shot of espresso or coffee extract are both good alternatives. If you want your Baileys more chocolatey, simply add some more cacao powder (or Dutch process cocoa powder).

Those who can't have dairy but still want to enjoy a glass of this deliciously creamy Baileys, simply swap the condensed milk with my homemade Dairy-Free Keto Condensed Milk, and substitute the heavy whipping cream with coconut milk. If you want to make it nut-free, just use water instead of almond milk, or use any seed milk (poppy seed milk is delicious!).

Before you go ahead and give it a try, just keep in mind that like with any alcoholic beverage, you should limit your consumption to minimum if your goal is to lose weight.

Tips and Substitutions

I used my Keto Condensed Milk (uses cream) but feel free to use my Dairy-Free Keto Condensed Milk (uses coconut milk) and swap the whipping cream in the Baileys for coconut milk if you are dairy-free.

If you want to make it nut-free, use water instead of the almond milk, or use any seed milk (poppy seed milk is delicious!).

Instead of brown sugar substitute, you can use Swerve or Erythritol.

Ingredients (makes about 740 ml/ 25 fl oz)

Keto Condensed Milk:
  • 1/2 stick (4 tbsp) butter (57 g/ 2 oz)
  • 2 cups heavy whipping cream (480 ml/ 16 fl oz)
  • 2 cups unsweetened almond milk (480 ml/ 16 fl oz)
  • 1/2 cup brown sugar substitute such as Lakanto or Sukrin Gold (80 g/ 2.8 oz)
Baileys Irish Cream:
  • 1 cup keto condensed milk (240 ml/ 8 fl oz) - recipe above
  • 1 cup heavy whipping cream (240 ml/ 8 fl oz)
  • 1 cup whiskey (240 ml/ 8 fl oz)
  • 2 tsp sugar-free vanilla extract
  • 1 tsp sugar-free almond extract
  • 2 tsp powder or Dutch process cocoa powder
  • 1 tsp instant coffee powder or 1 shot of espresso


  1. First, prepare the low-cab condensed milk. Place the butter into a sauce pan. Cook over a medium heat until it starts to foam and brown. This will take just a few minutes and you should keep an eye on it to prevent burning. Browning the butter will enhance the flavour. Homemade Low-Carb Baileys Irish Cream
  2. Pour in the cream and almond milk. Don't panic when you see the butter floating on top at first. Add the sweetener and mix until well combined. Homemade Low-Carb Baileys Irish Cream
  3. Bring to a boil over a medium-high heat. Once it starts simmering, turn the heat down to low. Reduce the liquid to about half of the volume. This will take 30-45 minutes. You should get 2 to 2 1/2 cups of condensed milk. Homemade Low-Carb Baileys Irish Cream
  4. When done, remove from the heat and set aside to cool down to room temperature. Blend using an immersion blender until smooth and creamy (this will help remove any clumps). Homemade Low-Carb Baileys Irish Cream
  5. To make the Baileys, place the condensed milk into a blender. Add heavy whipping cream and whiskey. Homemade Low-Carb Baileys Irish Cream
  6. Add the vanilla extract, almond extract, cacao powder and coffee powder. Blend on medium-low until just combined. (Note: High speed blenders can curdle your Baileys! Make sure to use a slow-medium speed. If the mixture curdles, strain the liquid through a sieve and discard any curdles.) Homemade Low-Carb Baileys Irish Cream

I just made this. Doubled the recipe using a Canadian "mickey" (13 oz) of whiskey. It's pretty good, but two things I will change next time around. A little less coffee and less heavy cream.

I have a Christmas tradition of putting up the tree with a large glass of Baileys and some Frank and Bing playing in the background, thanks to this recipe I can continue the tradition and stay in ketosis! It's well worth the effort of making the condensed milk which is delicious in it's own right. I used Sukrin Gold and Jameson and it all came together perfectly. Absolutely delicious!

Love the variety of recipes you have

Pretty good, however I found the flavor of the almond milk in the condensed milk super overwhelming. I feel this recipe would work much better making the condensed milk with unsweetened coconut milk instead.

It should work too but may be a lot thicker. It depends on the type of coconut milk. So for example if you use carton coconut milk like Aroy-D (should be just water and coconut), then this might work quite nicely. Canned coconut milk might be too thick for this.

This is so delicious! I've been wanting to make this for ages but only just got around to it now. I made the condensed milk last night (I have made it before and loved it even then!) and but together the Baileys today. Like another reviewer, mine too set into a very thick, pudding-like consistency (as I used double cream rather than whipping cream, I suspect) but it was easily thinned out with some water and stirring. I followed it step by step.. but the product once cooled in fridge turns into a pudding like consistency... any advice?

I'm sorry to hear that, could it be that the cream had a higher fat content? The ingredients I used result in thick and creamy but still pourable consistency.

hi i made this baileys recipe, but found that i could still taste the almond milk, so i reduced it by half and increased the cream half, i also found it abit thick so added some water to a consistancy that i liked, was lovely, in fact im enjoying a glass as i write this. x

Oh I'm sorry I have to admit I'm not a whiskey expert so I can't remember what it was. I think it depends what you like.

Hi....I have made your recipe and it's delicious!   However, when added to hot coffee, it breaks down 😞    Due to this, I searched the internet to make other copycat recipes to which I had the same results....  I've tried different sweeteners including Allulose, made it with condensed, as well as all ingredients together.... no difference....    Hoping you may have a solution for me?   Thanks, MIchele

I'm sorry to hear that Michele, I think this could happen if you over-beat it. It splits because the fats separate. I literally only quickly pressed the button to pulse but not to create any froth. If the cream gets whipped then it could split. Mine did separate a bit after I placed it in the fridge but it was still pourable and it was easy to fix just by shaking briefly. I've been trying different ways by skipping the condensed milk and using egg yolks instead. It works better (less fat means less likely to thicken too much or split) but the colour is a bit off with egg yolks. It's worked really well though so I'll try to share it soo but I can't promise it will be before Christmas.

I guess I messed up and added all of the 2 1/2 cups condensed milk in with the Bailey's recipe. Do you have any advice to fix it or just go with it? I don't really want to add more whiskey and whipping cream to double it. What do you do with the extra 1 1/2 cups of condensed milk? Perhaps next time I just make half the condensed milk.

I would probably just leave it as it is. If you find it too sweet, maybe add some almond milk.

Martina, this recipe was perfect! I didn't find as many uses for the condensed milk, though I tried your excellent suggestions. Can you give the recipe for just one batch of Bailey's, without making condensed milk first? I would super appreciate it!

Hi Lisa, you can store it for 1 week in the fridge in a sealed jar.

Left over cond milk easy bake almond crust and use chips butterscotch white chocolate and pecans  almond  nuts and Unsweetned coconut add condensed milk bake 15 min 350 cake pan ( bars) magic bars !!

In the preliminary text you say add more cacao if you want more chocolate flavour, then in the recipe itself you've written it as cocoa. Which is it please?

Sorry for the confusion, you are right. Just to clarify:
- cacao powder = raw unprocessed, no sugar added, medium-light brown colour. Good option.
- cocoa powder in terms of Dutch process cocoa powder. It's a good option too and it's sugar-free.
- cocoa powder = one with added sugar is not suitable.

I am wondering if your keto Baileys needs to be refrigerated? I see I can be stored in glass bottles for 6 weeks

Hi Judy, I'd definitely keep it in the fridge. You may have to shake it before pouring but it has to be refrigerated. Make sure not to blend/froth it as the cream would separate. I only pulsed it a few times to combine but simple mixing all the ingredients will be enough.

Absolutely! You can use regular ground coffee made in a French press. It can be used to taste so even if you use a little more it's ok. Strong coffee and less liquid is generally better. I hope this helps 😊

Could you add some no carb sugar free Irish cream syrup to this?

Hi Jennifer, I'm not familiar with this ingredient but I suppose you could use this it if it doesn't affect your blood sugar (some types of "no-carb" sweeteners may contain maltitol or sorbitol).

Hello, thank you for posting this recipe! The condensed milk was phenomenal, however my liquid did not reduce by half. I did bring it to a simmer and reduced to low for 30-45 minutes. Not sure what I did wrong...any suggestions?
