These low-carb truffles are so easy to make and just as delicious as chocolate chip cookies. They are high in healthy fats and low in carbs, just like my other fat bomb recipes.

The main ingredient is toasted almond butter that gives these guilt-free treats their characteristic cookie dough flavour. If you can't eat nuts, you can use sunflower butter instead - they will be equally delicious!

Note: Instead of almond butter, you can use any preferred nut or seed butter - here are some homemade options you can try.

  3. After an hour, remove from the fridge. Use your hands to form 16 truffles and place them on a tray. Transfer into the freezer for 1 hour. Keto Cookie Dough Truffles
  4. Meanwhile, melt the dark chocolate and cacao butter in a double boiler or a glass bowl on top of a small saucepan filled with a cup of water over a medium heat. Once completely melted, remove from the heat and set aside to cool down. The chocolate should not be hot when you use it for coating. Keto Cookie Dough Truffles
  5. Remove the cookie dough truffles from the freezer. To cover them in chocolate, use a wooden stick or a fork. Pick up one truffle at a time and hold over the bowl of melted chocolate. Spoon the chocolate over the truffle until well-coated. Keep turning until the chocolate is solidified. If you have any leftover chocolate, drizzle it over the truffles. Keto Cookie Dough Truffles
  6. Place each of the coated truffles on a tray lined with greaseproof paper and place in the fridge for at least 15 minutes before serving. Keto Cookie Dough Truffles
  7. Store in the fridge for up to a week or freeze for up to 3 months. Keto Cookie Dough Truffles

I changed the way I ate in 2011, when I was diagnosed with Hashimoto’s, an autoimmune disease that affects the thyroid. I had no energy, and I found it more and more difficult to maintain a healthy weight.

That’s when I decided to quit sugar, grains, and processed foods, and to start following a whole-foods-based ketogenic approach to food.

These are absolutely fabulous! I agree with Kristin, I have never looked forward to a fat bomb like this one! Thanks for sharing! 😊

Thank you for your kind words!

These are just fantastic! I have never looked more forward to eating a fat bomb until I made these babies! Everything from the flavor and texture,to the wonderful after taste is just to die for! Definitely recommend making these if you're on a low carb diet or just want a sweet treat!

Thank you! I'm glad you enjoyed!

Thank you Martina for your recipes!  These were great!  The first time I made them I added the coconut flour all at once which created a drier truffle.  The next time I made them I excluded the coconut flour altogether, they were excellent!!  I used the pecan and coconut nut butter recipe as my nut butter.

Thank you for your kind words! I suppose that depends on the oil content in the nut butter. Some nut butters are dry and solid with a layer of oil on top, while others are creamy/runny - that would explain the dry truffles.

These look wonderful. I have not heard of toasted almond butter before. Is that something you can get in the grocery store? Thank you.

Yes, you can find toasted almond butter online (it's sometimes called "roasted" almond butter). Or you can make it at home by baking almonds in the oven (190 C/ 375 F) for 5-10 minutes, then placing them in a food processor for 1-3 minutes until chunky or smooth 😊

HI! i am new to this keto thing and i am wondering can i sub granular swerve for the sweeteners (unless they call for liquid sweetener) ?

Hi Cat, yes you can - it's better if you use confectioners rather than granulated Swerve.

These look scrumptious. I cannot handle sugar alcohols...would Stevia work and if so, do you know how much, by chance? Thank you so much for sharing your recipes.

Yes, absolutely, stevia will work too - just make sure you don't use too much so that they don't taste bitter. You can even skip sweeteners altogether.

These look good, and probably within my limited baking ability, lol!

Thank you Kalyn! That's not possible, your recipes are always amazing! 😊

What is the purpose for the coconut flour?  Can it be eliminated with no loss of flavor and less carbs?  Thank you

I use it to reduce the moisture and make it more doughy. You could use almond flour instead but you'll need to use more of it because it's not as absorbent as coconut flour. If you use more almond flour, then you will end up with more truffles and may need to use more chocolate to cover them.

Made these for the second time now. That means they are great!! Like them a lot. Thanks for developing and sharing such a great recipe.
Wendy

Thank you so much! 😊

And only NOW after making them numerous times I realise it is coconut BUTTER and not oil hahahaha. Well it works anyway.
Still delicious, my no 1. treat.

I'm glad it worked anyway 😊 I don't blame you, they're easy to confuse as the name is misleading.

Looks delish. Can you omit choc coating? Does this save a fee carbs?

Yes you can 😊 When you keep them refrigerated, they will hold their shape. Or you can use the mixture as nut butter and keep it outside the fridge. The effect on carbs will be small (without coating).

These are fantastic!! I made them last night and the whole family loved them. Thank you for making keto so easy for us! 😊)

Thank you Beth, I'm glad you did!

Hi, a quick question, I assume I can swap out the walnuts/pecans for either other nuts or something else?

Absolutely! Just be aware cashew nuts and pistachios have more carbs than macadamias, almonds, etc.
