These pretty pink-tinged cocktails with rose-dappled ice cubes are the perfect drinks to share with your loved one on Valentine's Day, or to enjoy at a bridal shower or bachelorette party. The perfect suga-free cocktail for any special occasion!
The floral ice cubes add an extra pretty element to this low-carb drink, but if you haven’t made any ahead of time, you could simply use regular ice cubes and mix in some fresh or dried petals to the drink to serve.
We used gin to make these sugar-free cocktails but you can skip the alcohol or add and extra squeeze of lemon juice.

Ingredients (makes 2 servings)
Floral ice cubes:
- 1/4 cup dried or 1/2 cup fresh rose petals or any other edible flowers
- enough water to make 1 tray of ice cubes
Homemade rose water:
- 1 tbsp dried rose petals or 2 tbsp fresh rose petals
- 1/3 cup water (80 ml/ 2.7 fl oz)

Instructions
- To make the ice cubes, divide about 1/4 cup of the dried rose petals evenly among the ice cube tray, and then cover with water. Place in the freezer until set.
- You can make rose water at home or use ready made rose water. To make the rose water, add the about 1 tablespoon of rose petals and 1/3 cup water to a small saucepan. Cover, and bring to the boil. Reduce to the lowest temperature, and simmer, covered, around 5-10 minutes or until the colour of the rose petals have faded.
- Cool completely. Strain through a nut bag or fine mesh sieve. Store in the refrigerator up to 3 weeks.
- To assemble the cocktail, add the gin, lemon juice, rose water and erythritol to a jug. Stir until combined and the erythritol is dissolved.
- Add 2-3 ice cubs to each glass and pour over the gin mix.
- Top with sparkling water (club soda).
- Serve immediately.
