Everyone should know how to make perfect scrambled eggs. This recipe shows how with just a little twist you can bring big flavours to your food and have something different for breakfast. Ingredients (makes 1 serving)

  • 3 large eggs
  • 1 tbsp butter or ghee (15 ml)
  • 1 tbsp pesto (15 g/ 0.5 oz) - you can make your own pesto
  • 2 tbsp crème fraîche or sour cream (30 g/ 1.1 oz)
  • sea salt and black pepper, to taste

Instructions

  1. Crack the eggs into a mixing bowl with a pinch of salt and pepper and beat them well with a whisk or fork. Easy Low-Carb Pesto Scrambled Eggs
  2. Pour the eggs into a pan, add butter or ghee and turn the heat on. Easy Low-Carb Pesto Scrambled Eggs
  3. Keep on low heat while stirring constantly. Do not stop stirring as the eggs may get dry and lose the creamy texture. Add the pesto and mix in well. Easy Low-Carb Pesto Scrambled Eggs

Its amazing how marketing can turn people into complete tools. People who pay 4x more for "free-range" eggs when there is no such thing. It's complete marketing to stupid people.

I am not sure where you are getting your information from but your comment is offensive and totally wrong. It says more about you than anyone else. Free-range is not a marketing term: Should I Buy Organic, Grass-Fed, and Pastured Animal Products?

I'm not Keto. And when I was looking for a recipe I wasn't even looking for a keto recipe. I was looking for something for Easter breakfast in bed for my girlfriend. This was great, and if you're not Keto English muffin is it great accompaniment to this. If I make this again I'll probably replace the avocado on top with tomato. It's just really really rich and the avocado adds to that, whereas I think the tomato would add a counter point of acidity.

I love pesto and am always looking for ways to use it.  This was DELICIOUS!
I had to use sour cream, too.  Still amazing.  Unfortunately I have no avocado, but sounds like a good thing to try in the future, too.

WOW!!! These eggs were amazing! What a great twist on scrambled eggs! I didn't have that fancy creme that the recipe called for it sour cream on hand, so I used cream cheese. It was phenomenal! I will definitely make this one again. Thank you!

I just made these eggs and they were amazingly very good.  I didn't have creme fraiche so I subbed with sour cream.  I have made pesto eggs before but never put in sour cream before and I like that addition.  I also used the frozen pesto sauce cubes.  Even my husband liked them.  At first he looked at his dish and said "so we're having green eggs and ham". No, green eggs and bacon!  Thank you for sharing this.

Huh, I make scrambled eggs all the time, but I've never thought of adding pesto before! (nutmeg, apple and cinnamon, or parsley have been my go-to seasonings). I'll have to give it a try though, it looks delicious. Thanks! I'm really happy to hear about your new book btw. Will it have recipes from your apps? As an android user I've not been able to have a look at them yet and I feel like I'm really missing out. 😊

Thank you Jenny! I haven't tried nutmeg and cinnamon - do you then use salt or a sweetener? Sounds interesting, I'll have to give it a try 😊 The book will contain a total of 150 recipes. 30 of these recipes are already in my apps - in my opinion I chose top 30 out of 238 currently found in the apps. The remaining 120 recipes in the book are new and not found anywhere else.

Sounds great. I'll definitely have to get a copy. As for my scrambled eggs, I just add a little salt or nothing at all - I never use sweeteners, since I find they keep my sugar cravings going.

Thank you Jenny! I totally agree on the sweeteners, they are sometimes better avoided. Although Erythritol is only 70% as sweet as sugar, I usually use less in my recipes. T think my palate has changed since going low-carb 😊
