Who says that you can’t have jam on a low carb diet?

Pfffft! Not only can you have jam, you can have your jam in just a few minutes! Being able to make a small batch of chia jam in a short amount of time means that you can be a bit creative with your flavours.

The addition of balsamic vinegar gives your familiar everyday raspberry jam a new and mysterious depth. Enjoy!

Ingredients (makes about 2 cups)

  • 500 grams frozen or fresh raspberries (1.1 lb)
  • 2 tbsp balsamic vinegar (30 ml)
  • 2 tbsp chia seeds (16 g/ 0.6 oz)
  • 12 drops of stevia, or to taste

Instructions

  1. Place all the ingredients in a saucepan: raspberries and balsamic vinegar. Sugar-Free Raspberry Balsamic Chia Jam
  2. Add chia seeds and stevia. Cook on the stove over a medium heat for a few minutes.

  3. Stir and squash the raspberries as the heat through to release the juices. Feel free to add a tablespoon of water if you are concerned.

  4. Continue until the berries are uniform and a jam-like consistency is achieved. Taste and add sweetener if needed. Spoon jam into jars and seal while hot.

  5. This makes a large batch of jam, so is perfect for gifting. Feel free to reduce the amounts by a quarter for an individual jar.

  6. Store sealed in the refrigerator for up to one week.

I love this and love balsamic sms strawberries! I don’t have stevia drops but I have monkfruit golden and classic sugar Could I use that instead? Thank you so much!

Yes, monk fruit sweeteners will work well here. You can mix it in while the berries are still warm sop it has time to dissolve. You can use as much as you like.

Could you freeze these, or for that matter any of the fruit jams made with chia?  I am not real familiar with chi an dam just learning since I went keto.  

Absolutely! It's best to freeze them in an ice tray if you think you can't eat them within 1 week (stored in the fridge and sealed).

Hei, I wanna try your recipe because I have so much rasberries at home I don’t know what to do with it.. but I have one question about storing - do I need to keep made jars in the fridge for the whole time or just when I opened ones?

You will need to keep them in the fridge the whole time. Also, if you're making a large batch it's best if you preserve the jam using the canning method. Once preserved, these can be kept outside the fridge until they are opened.

You can leave it out but it goes well with raspberries and strawberries. It's just for flavour 😊

Very inspiring!I am going to add some chopped up chilli and a tablespoon of fried diced onion,then put some on top of baked camembert or brie....💥
