Sweet mug cakes are some of the easiest go-to keto desserts. A couple of minutes - that's all it takes to make this treat! Even if you don't follow a ketogenic diet, you will simply fall in love with them. Just like my other recipes, these are also paleo-friendly. If you don't have a sweet tooth, you can try some of the savoury mug muffins on my blog!

Tips & substitutions

If you want to make the recipe nut-free, use 1 tablespoon of coconut flour instead of 2 tablespoons of almond flour. If you don't have coconut flour, you can use 2 tablespoons of finely shredded desiccated coconut instead.

Too "eggy"? Although I like this combination, some of you may perceive it as too "eggy". You can try the following: use one egg, double all the dry ingredients and add 1/4 cup coconut milk, almond milk or cream. This mixture will make 2 mug cakes.

Instead of the listed sweeteners, you can try other healthy low-carb sweeteners from this list. The reason I'm using both Erythritol and stevia is to mask the aftertaste some of the sweeteners may have.

If you don't have a microwave, I suggest you make 4-8 servings at once. Preheat the oven to 175 °C/ 350 °F (fan assisted), or 195 °C/ 380 °F (conventional) and cook for about 15 minutes or until cooked in the centre.

  1. Place all the dry ingredients in a mug or a ramekin and combine well. Vanilla Keto Mug Cake

  3. Add coconut oil and stevia and mix well using a fork. Microwave on high for 70-90 seconds.

I made this, split it into two, layer cake style, whipped 4 T of whipped cream, frosted it like a cake and sprinkled the middle layer and top with lightly, naturally sweetened cacao nibs for crunch....presentation is beautiful andtaste was phenominal. For those cheat days or splurge times

Thank you for the recipe and your tips at the end!! I made this last night with the 1 tablespoon of coconut flour, butter, and added a splash of heavy whipping cream bcuz mine seemed to need more liquid. Probably bcuz coconut flour is so absorbent. Anyway, it was delicious!!! Because of recipes like this, Im not missing sugar at all. Thanks again!! Love it!

I'm not sure what I did wrong. I've made mug cakes in the past, but this one turned out really thick (like a dough, not batter). I did not add liquid stevia as it said optional.

Hi Christina, did you substitute the almond flour with coconut flour (more absorbent)? That might be the reason. Or the egg might have been "medium"?

I added lots of vanilla and a 1/8 or so of a cup of Lily's chocolate chips. Very tasty! Mine was a bit dry and crumbly, I think I used too much 'heaping' in the tbsps and not enough olive oil.
I'll attempt to do a bit more with it in future. It stands on its own, and is also such a great base recipe; I'll try adding lemon or orange extract and perhaps  some berries and/or nuts (though will try the chocolate chips again with the lemon...lemon and chocolate!! ...and also with poppyseed. Lemon poppyseed are my favourite muffins).

Kris, I suppose you use an app like MFP to get to that value? I'm afraid your calculations are wrong. We use verified sources (not crowd sourced) to calculate all nutrition facts. What you see is accurate.

Mine was a complete bust. Followed the directions minus the sweetener mentioned and it smells like straight eggs andlooks nothing like the pic.

Hi Melissa, I'm sorry it didn't work for you. I've been making this mug cake for several years and always had the same results so I'm not sure what the issue might have been. There are tips below the list of ingredients that might help.

How many calories???

It's listed in the table as "kcal".

Are we to use both the almond flour and the coconut flour or just choose one or the other.   The ingredients listed both but the tip said to use 1 tbsp of coconut flour instead of almond flour.  Would that mean we are to 2 tbsp of coconut flour?  
Also, your recipes look delicious.  Looking forward to giving this one a shot as well as a few others.  

This recipe uses both but if you want to avoid almond flour, you can substitute it with a tablespoon of coconut flour. I hope this helps!

Thanks for the recipe! I added 1 tbsp unsweetened cocoa powder and oh man it was so freakin' good! (I did butter, powdered erythritol, and 3 drops of liquid stevia). Would be super good with a scoop of vanilla halo top!

I tried this tonight and unfortunately, my batter came out super thick.  Are the proportions on the recipe correct?

Hi Scott, I'm not sure what went wrong. It's very small amounts so you shouldn't need to weigh it. Did you use large eggs?

I had the same issue...  I think "heaping" is a subjective term ...different ppl use it differently. A suggestion... would it not be easier to measure in tbsp and teaspoons...I read somewhere that a tbsp each of almond flour and coconut flour each weigh 6gms and 8 gms respectively..heaping more may have caused thick batter.

I've tried a lot of keto mug cakes and this one is definitely in my top 3. I was really excited to try a vanilla base cake since almost all of the other ones I had tried in the past were chocolate.  I knew I could make a few tweaks to the flavor without changing much of the integrity, and I'm really glad I did.  Instead of using vanilla extract (1/2 tsp in recipe), I used a combination of Sugar Free Vanilla Torani Syrup (1/2 tsp) and Sugar Free Chocolate Chip Cookie Dough Torani Syrup (1 tsp).  (I skipped the liquid stevia entirely since I added in the extra syrup.)  I let the mixture sit for a few seconds and then added in 1 tbsp of water to thin the batter.  90 seconds in the microwave and it was perfect.

Torani makes SF cookie dough syrup?  You may have changed my life with this info, friend!  Yay!

My first experience with a keto dessert fell flat so I was skeptical of the mug cake but we're having a celebratory cake at work tomorrow so I really wanted something sweet. I made this to try tonight and holy moly it was fantastic!!!! I used Monkfruit as my sweetener and didn't bother to top it with anything! Thanks! I am totally going to stalk the recipe pages now!

Hi Martina! I love your blog and have been reading and following it for a while. I started a keto diet a while ago and lost almost 30 pounds but I fell off and trying to get back into it. Unfortunately when I fell off I was eating sweets again. Now that I'm trying to be strict with keto again I am craving sweet food so I decided to try some of the mug cakes and made this vanilla one tonight. It was really good and stopped me from buying something with real sugar today. I also made the bone broth and chicken broccoli alfredo yesterday and it taste great. I was having a sweet craving just now and this is bomb.
The mixture looked a bit dry to me so I added half a tablespoon of heavy cream and the cake was moisture, fluffy and delicious!
