These sugar-free vanilla protein bars are ideal for busy days when you just need to grab a quick and filling snack. Every ingredient used in this recipe has its purpose.

While almonds and collagen are a great source of protein, macadamia nuts will provide heart-healthy monounsaturated fats. Hemp seeds are one of the best sources of magnesium. Chia seeds help the bars set and are a good source of fibre and omega 3 fats. Finally, MCT oil powder which is ideal for making keto bars, will provide an extra energy boost.

These bars need to be kept refrigerated. You could make them room temperature stable if you add more cacao butter. Just keep in mind that while this works well in chocolate flavoured bars, more cacao butter in these vanilla bars could be too overpowering.

Tip: you can even use my homemade roasted Almond & Cashew Butter, Macadamia & Brazil Nut Butter or any other nut & seed butter.

Ingredients (makes 16 servings)

  1. Preheat the oven to 175 °C/ 350 °F (fan assisted), or 195 °C/ 380 °F (conventional). Place the macadamia nuts in a baking tray and transfer into the oven. Bake for 5 minutes, and then remove from the oven and place on a cooling rack. Vanilla Macadamia Keto Power Bars
  2. Meanwhile, in a small sauce pan, melt the cacao butter. Add the almond butter and cashew butter and mix until smooth and well combined. Pour into a mixing bowl. Vanilla Macadamia Keto Power Bars
  3. Measure out all of the remaining ingredients: MCT oil powder, collagen powder, powdered Erythritol, chia seeds, hemp seeds and vanilla powder. Vanilla Macadamia Keto Power Bars
  4. Add them to the bowl with the melted cacao & nut butter. Mix until well combined. Vanilla Macadamia Keto Power Bars
  5. Place the dough in a container (you can use a silicone square baking dish like this one). Flatten with a spatula and top with the roasted macadamia nuts. Transfer into the fridge for about an hour or until set. Vanilla Macadamia Keto Power Bars

Can you please share recipes containing cocao butter please that doesn't involve any other nut other than macadamia?

What is a good substitute for the collagen powder? Also, instead of MCT powder would coconut oil powder be ok? Thank you!

I'd try egg white protein powder or whey protein powder (protein isolate). I haven't tried coconut oil powder but I assume that you can even use coconut oil (as long as you keep it in the fridge).

Mmmm.  I made these, but used pistachios instead of macadamias.  They were so good!  I am definitely keeping this recipe to use again!

Two questions:
(1) What does 6 T MCT powder equal in actual MCT oil?
(2) I don't have MCT powder, but I love the thought of having MCT oil in a protein bar. Is there any way I can use MCT oil, maybe by reducing another ingredient?  If that isn't possible, what would you suggest as a replacement?

Hi Jazz, I would not use MCT oil as the bars would not set. Instead, you can use coconut oil. 1 scoop of MCT oil powder is 7 g fat, while 1 tbsp coconut oil is 14 g fat. There is 42 g of fat per 6 scoops of MCT oil powder so you can use 3 tablespoons of coconut oil to get the same effect on nutrition facts.

I realized I have all the ingredients for these, right down to the MCT powder and raw cacao. I made them and wow. A little square is so filling! I've been keto for 4 months now, and usually am always a bit hungry. I've used the ingredients separately, such as in keto coffee and various mug cakes, but nothing is as satisfying as this bar. These bars look very good! I would like to make them, but I cannot get MCT oil powder in Italy (where I live).
What can I use to replace it? Or can I simply leave it out?

Hi Annalisa, I think you can use more collagen powder or quality unfavored whey protein powder (these would make them higher in protein). If you want to add healthy fats, you can add a little more cacao butter or coconut oil. I hope this helps!

I get mine on Amazon, link is in the list of ingredients if that helps 😊 You can also get it in most health food stores.

These are sooooo good! I love the flavor I just wish they didn't melt at room temperature so I could take them to work. Next time I will try more cacao butter 😊

I have one question about roasting or put it more specificly heating up nuts or any seeds which is rich in monounsaturated and polyunsaturated fats... especially for polyunsaturated fat....?does the heat break the fat into something harmful? Like flaxseed mill, shall we avoid baking or roasting it?

Hi J, macadamias are high in MUFA which are more heat stable compared to PUFA. Also, boiling, roasting, or other methods of heating nuts and seeds can reduce their lectin concentrations. Have a look at this post for more information on nuts: Nuts & Seeds on a Ketogenic Diet: Eat or Avoid?

The ingredients mentioned here, where can I find them? Are they all available in regular supermarkets like Tesco, or do I have to get them from somewhere specific.

Hi Nida, I get most nuts & seeds from my local grocery store or from Amazon, cacao butter from Amazon and other foods as linked in the list of ingredients. I hope this helps!
