These keto gummies are not just ultra low in carbs but they are also packed full of magnesium and potassium, both of which are often deficient in our diets. Plus we've got gelatin which is great for your skin, hair, bones, joints, and aids digestive function.

If you've tried my keto electrolyte drinks before, you know I'm always adding a pinch of salt. This time we are skipping the salt as I thought the gummies tasted better without it, and it's easy to get sodium from other food sources anyway.

These gummies are low in calories too so you could even include them on your fasting days if intermittent fasting is part of your lifestyle.

Recipe Tips

Making these electrolyte gummies is easy. Here are some extra tips for no-fail results:

  • You can use flavored magnesium powder such as raspberry & lemon or cherry, or you can use unflavored magnesium powder and add a few drops of sugar-free raspberry or cherry extract.
  • Sweetener can be used to taste. Allulose or Erythritol work best but stevia drops can also be used.
  • This ratio of liquid ingredients to gelatin will result in firm gummies. You can use up to 1/2 cup more liquid ingredients for chewy gummies.
  • You can use any fruit tea or a combination of more flavours like I did. Apart from fruit tea, you can use herbal tea such as hibiscus, mint or ginger, and your favourite low-carb sweetener.

Ingredients (makes 32 gummies)

  • 1 cup hibiscus tea (240 ml/ 8 fl oz)
  • 2 tbsp fresh lemon juice (30 ml)
  • 4 tbsp gelatin powder (44 g/ 1.6 oz)
  • 1/2 tsp potassium chloride
  • 2 tbsp Natural Calm magnesium supplement - raspberry or unflavored (12 g/ 0.4 oz)
  • 4 tbsp granulated Allulose (40 g/ 1.4 oz)
  • Optional: sugar-free extract such as raspberry, strawberry or cherry

Instructions

  1. Prepare the hibiscus tea by pouring slightly over a cup of hot water over 4 to 6 dried hibiscus flowers. After about 3 to 5 minutes, remove the flowers. Alternatively, make your favorite sugar-free fruit tea. Zero-Carb Electrolyte Gummies
  2. Pour about two thirds of the tea in a small bowl and sprinkle in the gelatin. Once the gelatin has bloomed, place in a saucepan and gently heat up to fully dissolve. Do. not boil. Remove from the heat. Zero-Carb Electrolyte Gummies
  3. Add the lemon juice, sweetener, magnesium and potassium to the jar with the remaining tea.
Note: See recipe tips above for sweetener and magnesium tips. Zero-Carb Electrolyte Gummies
  4. Combine the warm tea mixture with the cold mixture.
  5. Pour into gummy molds. Keep warm or gently reheat if the gelatin starts to solidify in the saucepan. Place in refrigerator for 1 to 2 hours.
Note: Place your silicone mould onto a tray before filling to make moving it easy and disaster free (talking from experience!). My silicon tray came with a pipette, but a clean eye dropper would do the job too. Zero-Carb Electrolyte Gummies
  6. When set, pop out of molds and into a jar. Depending on the size of the gummies, you'll make up to 70 small gummy bears or 30-40 larger gummies. Store sealed at room temperature for up to a day, or in the fridge for up to a week. Zero-Carb Electrolyte Gummies

I changed the way I ate in 2011, when I was diagnosed with Hashimoto’s, an autoimmune disease that affects the thyroid. I had no energy, and I found it more and more difficult to maintain a healthy weight.

That’s when I decided to quit sugar, grains, and processed foods, and to start following a whole-foods-based ketogenic approach to food.
