So in love with these cute carrot, ginger and lime low carb jellies. There’s only a little fresh carrot juice in them, just enough to add sweetness and this fantastic orange colour, without adding too many carbs.

Thanks to the gut healing grass-fed gelatin they’re the healthiest jellies going! You don’t have to make them just for Halloween, you can use any jelly shapes you like and enjoy them throughout the year.

If you’d like to try more of my sugar and sweetener free jellies, I’d recommend the Strawberry and Lime Jellies and Blackberry Jelly Bats.

I tried these and did not like them. It was my first attempt at jellies. The combination of flavors between the gelatin, strong lime, ginger was just too overwhelming. I thought I might combine just carrot, gelatin, and ginger in the future with grass fed gelatin (I couldn’t find it at my local store) to see if they better suit my palate. That way, if I still don’t like them, at least I could give them to the dogs as treats. ( Dogs can’t have lime.)

I think these may be a bit too "unsweet" to start with. They are a bit of an acquired taste. I would definitely start with sweet berry jellies like these: Sugar-Free Raspberry & Cream Jellies I hope this helps!

No way! These look amazing and I can't wait to try these pumpkin carrot jellies!

Thank you, I hope you enjoy! 😊
