I love creating healthy keto recipes for the spooky season. They are just so much fun to make and I get to experiment with ingredients I don't usually use — such as black cocoa powder.

I kept this recipe nut-free by using coconut flour although you could use about three times more almond flour if you need to substitute it for the coconut flour.

One batch will make 4 to 5 chaffles, depending on how much batter you use per chaffle. I find it easier to make 5 chaffles as the batter is less likely to leak out of the waffle maker. You can see more leakproof tips in my original Sweet Chaffle recipe.

I kept the frosting simple by adding sugar-free vanilla extract but you could add a few drops of green food colouring combined with some peppermint extract, or red food colouring with some cherry extract.

Ok, I'll admit it… The decoration is not exactly what I expected but I thought it was still pretty good for a simple 20-minute Halloween keto treat. Enjoy!

Instructions

  1. Preheat the mini waffle maker. Prepare all of the ingredients for the chaffle batter. Spooky Keto Chocolate Chaffles
  2. Start with the whole egg, egg white, mozzarella and cream cheese. Blend until smooth. Spooky Keto Chocolate Chaffles
  3. Add the dry ingredients (cocoa powder, coconut flour and baking powder) and blend again until well combined.

  4. Cook each waffle (about 50 g/1.8 oz batter) in a preheated mini waffle maker for 2 to 3 minutes.
  5. Open the waffle maker and let the chaffle rest to cool down slightly. Open the waffle maker, let the chaffle cool down for 15 seconds, and then use a spatula to remove and let cool down completely. Repeat until you make 5 chaffles. Spooky Keto Chocolate Chaffles
  6. Meanwhile, while the chaffles are cooling down, place the whipping cream, cream cheese, vanilla extract and powdered Erythritol in the bowl of a mixer. Using the whisk attachment, whisk until thick and creamy. Spooky Keto Chocolate Chaffles
  7. Place the mixture in a piping bag and decorate in any way you like. I tried to draw a spooky skeleton face but you can just spread the mixture on top using a spoon. The mixture is thick so you may need to use a spoon to smoothen your decorations. Spooky Keto Chocolate Chaffles
  8. Store the separate components in the fridge for up to 3 days and decorate on the day you plan to serve them. For longer storage, freeze the chaffles (with or without topping) for up to 3 months. Spooky Keto Chocolate Chaffles

I think these are fabulous.....and the wacky icing decoration makes them look like they just crawled out of the crypt....sooooo cute!  Plus they are a chocolate chaffle....whats not to love about that!
