Autumn is here and it's the best time for pumpkin recipes. So what is it that gives pumpkin treats their characteristic taste?
Although pumpkin itself adds a subtle sweetness and helps maintain a soft texture, it's the spices that make pumpkin treats so irresistible. I like making my own blend so I can choose the spices and flavours I like.

Ingredients (makes about 1/2 cup)
- 1/4 cup cinnamon (31 g/ 1.1 oz)
- 2 tbsp ground ginger (10 g/ 0.4 oz)
- 2 tsp ground nutmeg (5 g/ 0.2 oz)
- 1 tsp ground cloves
- 1 tsp ground allspice
- Optional but highly recommended: 1/2 tsp ground cardamom + 1/2 tsp ground mace
Instructions
- Mix all the ingredients and place in an airtight container. You can optionally add 1/2 tsp ground cardamom + 1/2 tsp ground mace.
- Store at room temperature in a sealed container.
