I get so excited when the sun finally comes out because it means it’s ice cream season! These 3 Ingredient Blackberry and Coconut Keto Popsicles couldn’t be easier to make.

If you have kids, this keto recipe is great for them too because are sweetened naturally with berries and can optionally be sweetened with just a touch of low-carb sweetener, unless you prefer your keto treats sweetener-free.

For big and small kids alike. Natural full-fat Greek yogurt will provide gut-friendly bacteria. And if you follow a dairy-free keto diet, you can swap it for coconut yogurt or coconut cream. Both are delicious.

Finally, these keto-friendly popsicles are not just for those who keep their carb intake low. They are also low in calories and you can enjoy them even when you are trying to lose weight!

Ingredients (makes 8 servings)

Instructions

  1. Blitz the blackberries in a high speed blender. Optionally, add 1 tbsp of your preferred low-carb sweetener.

  2. Stir the other 1 tbsp of low-carb sweetener through the yogurt. Add 1 tsp of vanilla powder to the yoghurt.

  3. Layer the blackberry and coconut yoghurt into your popsicle mould. You want 4 layers. Freeze for at least 4 hours or overnight.

  4. To remove the popsicles from the popsicle mould, simple run the sides under hot water for 5 - 10 seconds to loosen. Make sure no water leaks into the mould. Enjoy!

Hi Nellie, it's the tiny seeds from vanilla beans (dehydrated). You can use sugar-free vanilla extract or scrape the seeds out of one vanilla bean.
