There is nothing quite so satisfying as picking up a big, melty slice of grilled cheese sandwich and biting into that melty goodness. Especially when it's low-carb!

I thought these days were behind me, until I discovered 90 second bread. Now, I just want to make up for lost time by eating a different grilled cheese sandwich every day. I have included some of my favourite variations below. Enjoy!

Extra tip from a reader: substitute part of the almond flour with flax meal for a better flavour and no eggy taste.

If you have time to make a whole loaf of low-carb bread, apart from our 90-second bread you can use our Ultimate Keto Bread, Soul Bread or Fluffy Grain-Free Sunflower Bread.

Optional variations (use instead of the above filling)

  • 2 tbsp Red Eye Bacon Jam, 2-3 slices Brie cheese and handful of spinach
  • 3-4 oz cooked chicken, 1/4 sliced avocado, 1-2 slices Jarlsburg cheese
  • 1-2 slices Pastrami, 3-4 slices Provolone cheese and 2 slices red onion

Ingredients (makes 1 serving)

90-Second Bread:
Filling:
  • 1 slice cheddar cheese (28 g/ 1 oz)
  • 1 slice Swiss cheese (28 g/ 1 oz)

Instructions

  1. Place all of the bread ingredients into a small bowl and mix well.

  2. Grease a ramekin, or like me find a bread-shaped storage container. Pour the mixture into the container and shake to distribute evenly.

  3. Microwave on high for 90 seconds. Turn out and cool on a rack.
    Note: If you don’t have a microwave, you can use the oven. Preheat to 175 °C/ 350 °F and bake for 12-15 minutes or until cooked through.

  4. When cool, cut in half and spread with butter, if desired. Place the cheese slices in the middle and toast for approx. 5 minutes (or try any of our suggested variations in the post intro). I assume this is done in a frying pan, not in a toaster?

Hi Lorraine, you could use either pan or a toaster (or even a broiler) although if you use a toaster, the sandwich has to be laying flat so the type of toaster I'd use is closer to a panini maker. Thank you, I'll clarify this for others.

Does the baking powder have to be gluten free?

That only depends on your dietary preferences. The recipe will work just as well with regular baking powder, although I recommend avoiding gluten if you follow a low-carb/keto diet.

Is there any way to make this nut-free?  Would really like to try this recipe.  

You can indeed! You could use flax meal (about 3 tbsp) or coconut flour (about 2 tbsp, plus a dash of water). I'll share a separate recipe for the quick bread soon.

This recipe looks like even I could do it, but will need to replace the egg by a "vegan egg": ground flax or chia seed plus 1-3 volumes of water (recipes vary, the idea is to replace the moisture in the egg with water). This should give the binding effect offered by the egg.
And since flax seed is listed as a partial substitute for the almond flour - it should taste fine! Ground flax seed, chia seed, or even psyllium (yes, as in Metamucil capsules) are part of many vegan flatbread recipes as the binder. So it should work in this one.

“bake 350 °F for 12-15 minutes” for what dimension of the container?

About the same as the bread container, just ovenproof. It should be about the size of a regular slice of bread. A ramekin (1 to 1.5 cups)  is another option - to create a "mug muffin".

This was a great alternative to other keto bread recipes I've found, which were reminiscent of sawdust but without the flavor. This was a little too dry though, how can I give it more moisture and stay keto?

Thank you Amy! You could add moisture by adding one more tablespoon of olive oil or melted butter/ghee. Or you could add a tablespoon of cream cheese (if you can do dairy).

90 second bread has become my fav! I make it in the oven and add faux apple pie filling on top to get a  apple fritter/breakfast  treat.  I tried using protein powder instead of almond, doesn't work....stick to the recipe. I have sprinkled with almonds instead of faux apple pie but I like the apple pie.

What size of ramekin?

These are made in shallow sandwich containers, about the size of a loaf but you could use a large ramekin too, I think that 1-cup ramekin will work just fine.

Made it. Quick and easy.  I made it in the oven just because I wanted that browning effect. Next time I will try microwave. I really crave that yeasty flavor. Do you know of anything that could be added to get that flavor?
