This low-carb BBQ Chicken Pizza Soup is so good and so satisfying. Even better if you can serve it with some keto breadsticks or keto bread

I love the combination of BBQ chicken and pizza ingredients in this hearty, warming and satisfying soup. It's easy to make, tasty and great for a busy weeknight meal. I usually make a large pot from which I keep half in the fridge and freeze the other half to have a quick keto-friendly meal when I don't have time to cook.

To make the soup, you'll need about 2 litres/quarts of the chicken stock. Reserve the remaining chicken stock for other recipes. You can keep it refrigerated for up to 5 days or freeze for longer.

You'll also have some chicken bones which can be used to make even more delicious collagen-rich Keto Bone Broth. Bone broth is not just easy to make and healthy but it will also help you beat keto-flu! simply place the bones in a freezer bag and store until you have enough to make a batch of bone broth.

Ingredients (makes 8 servings)

  • 1 large chicken or 4-6 chicken legs (about 1.8 kg/ 4 lb, bones in) - will yield about 50% meat
  • 1 medium red onion (100 g/ 3.5 oz)
  • 4 cloves garlic
  • 1 large tin tomatoes, unsweetened (400 g / 14.1 oz)
  • 4 cups green beans (400 g/ 14.1 oz)
  • 3/4 cup Spicy Chocolate BBQ Sauce (180 g/ 6.4 oz)
  • 1 1/2 cup shredded mozzarella cheese, low moisture "pizza" type (170 g/ 6 oz)
  • 1/4 cup ghee or lard (you can make your own ghee) (60 ml/ 2 fl oz)
  • 2-3 litres/quarts water (enough to cover the chicken)
  • 1 tsp sea salt
  • 1/2 tsp freshly ground black pepper
  • fresh cilantro or basil for garnish

  1. Prepare the chicken by following the steps in this post. Skin the chicken and place it in a large pot filled with water. Add salt and cover with a lid.
  2. Bring to a boil. Once boiling, reduce the heat to medium-low and cook for 60-75 minutes. When done, the chicken should be pale and the meat comes off easily. Use tongs and place the chicken in a bowl to cool it down slightly. Keto BBQ Chicken Pizza Soup
  3. Using a fork, shred the meat off the bones and set aside. Peel and finely dice the red onion and garlic. Place both in a large soup pot greased with the ghee and cook over a medium heat until lightly browned and fragrant. Pour in the chicken stock and bring to a boil over a high heat.

  5. Add the BBQ Sauce and shredded chicken and take off the heat. Add more salt if needed and season with freshly ground black pepper. Keto BBQ Chicken Pizza Soup

I changed the way I ate in 2011, when I was diagnosed with Hashimoto’s, an autoimmune disease that affects the thyroid. I had no energy, and I found it more and more difficult to maintain a healthy weight.

That’s when I decided to quit sugar, grains, and processed foods, and to start following a whole-foods-based ketogenic approach to food.

Made with 1/2 cup beet ketchup and 1/4 cup bbq sauce, plus a Tbsp of chocolate sauce low carb. Because I didn’t have any bbq sauce and chocolate. It turn fantastic. My husband likes it also.

That sounds amazing, I'm glad you enjoyed! 😊

What is considered a serving size of this dish? Thanks!

Hi Michael, that will be about 2 cups (about 500 ml). It's a generous serving! 😊

Hi Martina, Just wondering if there was another alternative to the spicy chicken bbq sauce as I have made it before and not a big fan of the flavour? Thanks heaps 😊😊

Hi Tayla, I suppose you can try another low-carb BBQ sauce - I'm afraid it's the key ingredient in this recipe so it has to be a bbq sauce. Maybe you can adjust the BBQ sauce recipe and skip what you don't like?

This recipe says "1/4 ghee" - 1/4 what?

Will fix it now - it's 1/4 cup - thanks!

Just look at that beautiful fat on that soup, with the pile of cheese in the middle! Ppl who don't eat high fat, well I'm sad for them lol What flavors they are missing!

I agree, fat is what gives the food flavour! 😊
