How cute is this Keto Chaffle Breakfast Sandwich? If you are new to the chaffle craze, you're going to love how easy, convenient and versatile they are. Chaffles aka cheese waffles are the latest trend.

This mini waffle is made with just two ingredients, egg and shredded cheese. If you wand a more bread-like texture of your chaffles, mix in 1/4 cup (25 g/ 0.9 oz) almond flour or 1 tbsp (8 g/ 0.3 oz) coconut flour if you are nut-free into the eggs. There are two ways to add the cheese. You can mix it directly with the eggs or add it to the waffle iron to crisp up before pouring in the eggs.

We’re using a 4-inch (10 cm) Dash Mini Waffle Iron that you can pick up practically anywhere that sells kitchen appliances from around $15, you can’t beat that! If you don't have a mini waffle iron you can use a regular waffle iron and make one large waffle instead. When using as a sandwich, simply cut in half.

The waffle base makes perfect sandwiches so feel free to let your imagination run wild with these. For today we're doing a breakfast style sandwich with egg, bacon, tomato, and cheese.

Ingredients (makes 1 serving)

  • 2 large eggs, divided
  • 1/2 cup shredded mozzarella or hard cheese of choice (57 g/ 2 oz)
  • Optional: 1/4 cup almond flour (25 g/ 0.9 oz)
  • 2 slices bacon (60 g/ 2.1 oz)
  • 1 slice tomato (27 g/ 1 oz)
  • 1 slice cheese such as cheddar (28 g/ 1 oz)

Instructions

  1. Preheat a mini waffle iron. In a small bowl whisk one of the eggs. Optionally, add the almond flour and combine well. If you're using just egg the dough will be quite runny.
  2. Sprinkle a quarter of the shredded mozzarella (about 1/2 oz/ 14 g) in the waffle iron, top with half of the whisked egg. Or you can directly whisk the eggs with the mozzarella. Chaffle Breakfast Sandwich
  3. Sprinkle with another quarter of mozzarella (about 1/2 oz/ 14 g) and close the iron. Cook for 2-3 minutes until the waffle easily releases. Repeat for the second waffle.

  4. In a small pan, cook the bacon slices and then in the same pan scramble the remaining egg. Chaffle Breakfast Sandwich
  5. Top one waffle with the sliced cheese, tomato, bacon, and egg. Top it off with the other waffle and serve.

These look fantastic and easy to make.   However, AFTER buying a Dash baker, I headr from the manufacturer that the non-stick coating is made of Xylan.  The fluoropolymers utilized in Xylan coatings consist of PTFE, PFA, and FEP.  These are the same chemicals in Teflon that are strongly suspected of causing cancer.  I am worried about using this line of products now...

Chaffles are the 'in thing' at the moment and they always look delicious! I totally need to join the craze and invest in a waffle maker. So easy to make but the sandwich options are limitless, I need to give these a try! Just something a little different to the usual Keto meals I make! Sim x

Chaffles are so versatile! I think the main reason they are so popular is the simplicity and quick preparation. I make mine more bread-like. I've tried all of the possible variations there are so I'll share a guide to chaffles very soon 😊

I will keep checking back for the guide and keep it saved! I have a feeling I maybe making quite a lot of them! I'm a creature of habit with Keto meals, but a chaffle would offer a different texture, taste and I can make a 'sort of' sandwich! Is it wrong that I am too excited about this?! 😊 x

Can you cook these in the oven as I only have waffle moulds? They look amazing all the keto groups go mad for these!

I don't see why not! I've never tried a waffle mould but it should work just fine. Keep in mind the recipe is for mini waffles so you may need to scale up for regular ones.
